Donut Muffins

Makes 24 muffins

  • 1/2 cup white sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • For the cinnamon-sugar topping:
  • 1/4 cup unsalted butter, melted
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon

Preheat oven to 350 degrees. Grease 24 mini-muffin cups.

Cream together sugar and butter. Add egg.

In a separate mixing bowl, combine flour, nutmeg, salt, and baking powder. With the mixer running on low, add half the dry ingredients. Next, pour in half the milk. Repeat, then mix until just combined.

Fill the prepared mini muffin cups about half full.

Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.

While muffins are baking, place melted butter in a small bowl. In a separate bowl, mix together the sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture. Let cool and serve.
