Mini Crab Mornay

  • 8 tablespoons (1 stick) unsalted butter
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery ribs, chopped
  • ½ cup chopped fresh parsley
  • 2 tablespoons flour
  • ¾ cup heavy cream
  • 1 pound freshly grated Swiss cheese, divided
  • 1 pound fresh lump crabmeat
  • Red pepper, to taste
  • Tobasco sauce to taste
  • Toasted crostini or crackers
  1. Preheat broiler
  2. Melt butter in a medium saucepan over medium heat. Add onion, bell pepper, and celery. Saute until vegetables are soft. Stir in parsley.
  3. Stir in flour and continue to saute for 1 minute. Slowly add in cream, stirring constantly to prevent lumps.
  4. Add half the cheese and stir until smooth. Add the seasonings, then gently fold in the crabmeat.
  5. Spoon mixture into approximately 8 small ramekins. Top with remaining Swiss cheese. Place under broiler and toast until cheese is melted and golden brown.
  6. Serve with toasted crostini or crackers.
  7. Serves 8
