Homemade Black Cherry Sodas

  • 2 pounds fresh or frozen sweet black cherries (about 6 cups)
  • 2 cups of sugar
  • 1 cup of water
  • 2 liters club soda
  1. Combine cherries, sugar, and water in a large saucepan. Bring mixture to a boil. Reduce heat to medium and simmer for 10 minutes. Once cherries get soft, press them against the side of the pan with a spoon to release their juices.
  2. Remove pot from heat and allow to cool. Strain syrup to remove solids. Discard solids. Store syrup in an airtight container in the refrigerator. Makes about 4 cups simple syrup.
  3. When serving, fill an 8-ounce glass with ice. Add three tablespoons of the cherry simple syrup. Fill the rest of the glass with club soda. Stir to combine.
