Homemade Black Cherry Sodas
- 2 pounds fresh or frozen sweet black cherries (about 6 cups)
- 2 cups of sugar
- 1 cup of water
- 2 liters club soda
- Combine cherries, sugar, and water in a large saucepan. Bring mixture to a boil. Reduce heat to medium and simmer for 10 minutes. Once cherries get soft, press them against the side of the pan with a spoon to release their juices.
- Remove pot from heat and allow to cool. Strain syrup to remove solids. Discard solids. Store syrup in an airtight container in the refrigerator. Makes about 4 cups simple syrup.
- When serving, fill an 8-ounce glass with ice. Add three tablespoons of the cherry simple syrup. Fill the rest of the glass with club soda. Stir to combine.
